Ok so I arrived in Tennessee last night around 11:30, my kids are beside themselves because their perfect dad won't let them stay at our house even though Ronni is there to take care of them, he is such a fool does he not realize that in a few years neither of the boys will have to be around him if they choose not . Anyhow I arrived safely due totally to my perfect driver. I have promised to include recipes in ths blog so here is what I with the help of Travis made tonight and believe me if I do say so myself it was pretty damn good. And we are back so here we go.
1 Pound of 35/40 Fresh shrimp
1 bunch of fresh asparagus
1/4 # sugar snap peas
2 shallots minces
3 cloves garlic minced
3 Tbs. butter...not margerine
1 # box of Orichette or small shells
1/4 # pancetta
1/4 # diced prosciutto
1/2 # Portabellos diced
cook pasta till al dente drain and set aside
mince garlic and shallots
Sautee Prosciutto, pancetta garlic and shallots, till meat is crisp, remove from pan add 1 Tbs olive oil and 2 Tbs. of butter to pan add, asparagus, sugar snaps, and shrimp, sautee for 2 minutes, add portabellos sautee for 2 minutes, remove from pan and set aside. Add 1 tbs. of butter to the pan and 2 tbs of olive oil.. let simmer for about 2 to 3 minutes, deglaze the pan with 1/2 cup of dry vermouth gradually add a pint of heavy cream and 1/4 cup each shredded Parmesan and Romano cheeses, let reduce by half to a third.
Assemble the vegetables, shrimp, meats and all other ingredients mix together add the sauce mix well and enjoy.. I t made my 2nd nite in Tennessee very enjoyable...
